Hua Xiang Rou Gui

花香肉桂

Wuyi Mountains · Ha Ma Valley

Osmanthus · Gardenia · Cinnamon

Rou Gui means cinnamon, and most Rou Gui earns the name. It's the assertive one, spice forward, usually fired hard, the tea people reach for when they want to be hit. This is the other version. It's a floral selection, picked and roasted to bring out the top of the cultivar instead of the base, and the result is a Rou Gui that arrives politely and then turns out to have just as much behind it.

Dry leaf is dark and glossy with a reddish cast. The liquor is bright orange and completely clear. Osmanthus first, then gardenia, and the cinnamon shows up underneath rather than in front. Sweet, round, and clean, with a returning sweetness that builds over the first few steeps rather than announcing itself. Let the cup sit until it's cool and the flowers get stronger. That trick doesn't work on most rock tea, and it's the fastest way to understand what this one is.

About This Tea

The recipe came out of a custom collaboration between Rui Quan and Cha Zhi Ji about forty years ago, and Rui Quan has been making it since under Huang Shengliang. He fires it lighter than a Rou Gui usually gets, and that restraint is the whole tea. A heavy fire would flatten the flowers into caramel and leave you with a good ordinary Rou Gui. Small batches, charcoal, handmade. Spent leaves come out glossy with red edges, which is what careful roasting looks like when you turn the pot out.

Aging

This is the one tea in the collection I'd tell you not to hoard. The floral character is the reason to buy it, and floral character is the first thing that goes with age. It'll hold beautifully for a few years and slowly become a more conventional Rou Gui after that. Drink this one.
